What makes this bread distinctive?
Burger buns are a familiar part of American sandwich culture. Rising is not the only consideration: size should match the filling, and briefly toasting the cut surface helps it hold sauce. This formula includes egg in the dough and uses milk for the exterior finish.

Flour absorption, starter strength and room temperature all affect the result. On your first bake, watch the dough rather than the clock alone.
Method
- 01
Combine flour, milk, egg, yeast, sugar and salt. Add butter and knead for 8-10 minutes.

Cover and rise for 75-90 minutes.

Round 8 equal pieces, space on a tray and flatten lightly.

Cover and final-proof for 40-60 minutes. Preheat to 190°C.

Divide 20 g milk across the tops and sprinkle with sesame. Bake at 190°C for 16-20 minutes.

Cool on a rack for at least 45 minutes. Slice horizontally and briefly toast the cut sides in a dry pan.
