What makes this bread distinctive?

Coffee-crust buns appear in shopping-centre and bakery culture across the region, including Singapore, and are related to Malaysia-associated coffee buns. The dough is soft while the surface is more crisp. This is a home-oven adaptation, not the secret recipe of a particular chain.

HOME-OVEN FORMULA

step by step.

Flour absorption, starter strength and room temperature all affect the result. On your first bake, watch the dough rather than the clock alone.

Method

  1. 01

    Mix flour, milk, egg, yeast and sugar. Add salt and knead for 5 minutes. Work in the butter gradually and knead for another 8 minutes until elastic.

    Cover and rise for approximately 60-90 minutes until clearly increased in volume. Prepare the filling meanwhile; never fill dough with a hot mixture.

    Divide 40 g cold butter into 8 equal pieces. Divide dough into 8 pieces, flatten each and seal around 5 g butter. Arrange seam-side down on the tray.

    Cover and proof for 35-50 minutes. Dissolve coffee in 8 g hot water and cool. Beat the topping butter and icing sugar; add the egg, coffee and 60 g flour and mix until smooth.

    Preheat to 180°C. Put the topping in a piping bag and pipe a small spiral from the centre out over each risen bun, without covering the sides completely.

  6. 06

    Bake for 20-24 minutes until the topping spreads and forms a dry surface. Cool on a rack for 20 minutes and preferably serve the same day.

BAKER'S NOTES

Small details,
better results.

  • Butter can leak if it reaches the edges; seal the seams carefully.
  • Use soluble instant coffee rather than Turkish coffee grounds for the topping; it contains caffeine.
  • Contains milk, eggs, wheat and gluten; do not taste the raw egg topping.
