What makes this bread distinctive?

Pandan flavours sweets and bakery products in Singapore and neighbouring Southeast Asian cuisines. Its combination with Japanese milk-bread techniques reflects the region's multicultural baking. This home adaptation uses food-grade pandan juice; vivid green colouring is not the goal. Extract cannot be substituted in the same quantity because its concentration varies by manufacturer.

HOME-OVEN FORMULA

From worktop to oven,
step by step.

Flour absorption, starter strength and room temperature all affect the result. On your first bake, watch the dough rather than the clock alone.

Method

  1. 01

    Mix 25 g flour and 125 g milk in a small saucepan. Stir over low heat until it forms a thick cream; do not boil. Cool until lukewarm.

    Combine 425 g flour, 120 g milk, pandan juice, egg, yeast, sugar and salt with the lukewarm paste. Knead for 8 minutes.

    Work in the butter and knead for another 5-8 minutes. Cover and rise for 60-90 minutes until clearly expanded.

  4. 04

    Divide into 3 equal pieces and roll each up. Arrange in a greased 23 cm loaf tin; cover and proof for 45-60 minutes.

  5. 05

    Bake in a preheated oven at 180°C for 35-40 minutes. Protect with loose foil if the top browns too early.

  6. 06

    Turn out and cool on a rack for at least 90 minutes. Colour and aroma naturally vary with the pandan product.

  • When using extract instead of juice, follow the label dosage and make up the remaining liquid with milk.
  • A hot cooked paste can affect yeast and eggs; let it become lukewarm first.
  • Contains eggs, milk, wheat and gluten; check the pandan product label as well.
